Henri Champliau is a family-run winery based in Mercurey, in the Côte Chalonnaise region of Burgundy. Founded by Alexandre Graffard and named in honour of his grandfather, the estate reflects a heritage of passion for terroir, fine wine and tradition. “Our grandfather was a man who was passionate about his region and the riches that it offers us. He loved fine food and great wines and owned vineyards in Mercurey, taking the time to pass on this passion to us, always with his rather mischievous and thoughtful character.” — Alexandre Graffard Produced entirely from organically grown Chardonnay, the grapes are hand-harvested from selected plots dedicated to Crémant production, where well-drained, lighter soils and partial exposures allow for optimal ripening and freshness. Gentle pressing, primary fermentation in stainless steel and traditional bottle fermentation are followed by over 12 months ageing on lees, bringing texture and aromatic complexity. Fresh, refined and beautifully poised, Henri Champliau’s Organic Blanc de Blancs 2021 is a pure expression of Chardonnay grown in Burgundy’s cooler, higher-altitude vineyards. Pale gold with fine, persistent bubbles, it opens with elegant aromas of green apple, citrus blossom and subtle notes of almond and brioche. The palate is precise and vibrant, offering mineral tension, creamy mousse, and a crisp, dry finish that lingers with lifted lemon zest and white flower notes. A perfect match for delicate seafood, fresh goat’s cheese, sushi, or a brunch of smoked salmon and eggs.
