Longview Devils Elbow Cabernet Sauvignon – A Cabernet Sauvignon from old vines in the cool Adelaide Hills The grapes for the Longview Devils Elbow Cabernet Sauvignon come from the estate’s oldest vineyard. The Devil’s Elbow is named after a legendary hairpin bend on the old country road to the Adelaide Hills. The vines are planted on a north-facing slope with rows of vines running from north to south. The site is perfectly suited to Cabernet, with shallow, sandy loam soils on the surface and ferruginous rock and silica sand below. This helps to control growth and yield and with warm days followed by cool sea breezes at night, even, long ripening is ensured. All grapes were harvested by hand at the end of March to minimize damage to the grapes and then fermented on the skins for 14 days.
